A cotta clay roaster—often referred to by popular brand names like Römertopf or simply as a terracotta clay baker—is a traditional kitchen vessel designed for oven-cooking meats, vegetables, and bread using a natural steam-roasting method. How a Clay Roaster WorksUnlike standard metal or glass roasting pans, unglazed terracotta clay is naturally porous. The Soak: Before cooking, you submerge the entire roaster (base and lid) in water for 15 to 30 minutes. The clay absorbs moisture into its pores. The Steam Action: When placed in the oven, the heat causes the trapped water inside the clay to turn into steam.
